Label:
I think I fell victim to one of my own peeves w/ this sauce. Label is very plain, no heads exploding, no fire shooting out of butts, and zero expectations. Product listed as ghost pepper with 4 out of 5 heat. Nothing else, no descriptors.
Looks:
It has a deep, ruby read that looks distantly menacing. Very consistently red, no seeds, no solids visible at all. Sauce sticks easily to the walls of the bottle, but it's not overly thick.
Aroma:
It's an apple-cider vinegar lingering behind a fairly potent pepper base.
Taste:
It is an abundant sauce and at the risk of contradicting myself, it is simple and straight forward, and also a thousand notes hitting all at once. I was very, very surprised at the balance and full profile of Elijah's. Definitely picking up that naga jolokia right at the top and tip of the tongue. It's got a slow, deep burn that is quite pleasant.
Heat:
This one brings significant heat, seemingly without the help of extract. It's a very natural heat creep that rolls from the tip of the tongue and holds like a ghost fog. Very nice. I think you could run into danger if you are abusing it. Start in with this one slowly.
Overall:
Again, surprised at how much I like this sauce. Very simple packaging hides a very complex sauce. It seems that Elijah's would be complimentary almost anywhere, nachos to chili to the jambalaya, which was my first trial. The heat moves slowly but hits you with a bunch of notes almost immediately. The heat is ringed with perceptible but just in the background fruitiness that I believe is the reason for the perfect balance. It's not a fruity sauce, but the fruit hints seem to hold it all together. As mentioned at the top, this is an exceptional all-around sauce. You could put this right in the condiment basket on your table, I can't think if anything I would not use it for, breakfast or later meals.
